Researchers at Cornell University tested this idea at St. Andrew’s restaurant in New York. Their study determined that removing the dollar sign actually does work. Customers eating lunch at the restaurant who were presented with a menu that didn’t have dollar signs spent significantly more than those who saw a menu with dollar signs.
